This banana bread has been the most popular recipe on Simply Recipes for over 10 years. Thousands of people do it every day. For what? 

 Because this really is the best banana bread recipe. You can mix everything in a bowl, you can vary the amount of sugar or bananas. And the secret of its great taste? Melted butter.  The beauty of this banana bread recipe is that you don't need a fancy mixer! A mixing bowl, a fork for whisking the eggs, and a sturdy spoon for mixing the dough are all you need. Flexible sugar. The original recipe calls for one cup of white sugar, but most people, myself included, are fine with 3/4 cup, and many are fine with 1/2 cup.  You can mix chopped nuts, raisins, or chocolate chips in a cup if you like, or scoop the dough into a muffin tin and make banana nut muffins instead. You can even go a step further and make chocolate banana bread. This banana bread recipe was given to me years ago by my friend Heidi H, who many years earlier had asked a ski friend's mother, Mrs. Hockmeyer, about the recipe. Thank you Heidi! 

 
 Ingredient 

 

 2 to 3 very medium ripe bananas (7" to 7-7/8") long, peeled (mashed about 1 1/4 to 1 1/2 cups) 

 1/3 cup (76 g) butter, unsalted or salted, melted 

 1/2 teaspoon baking soda (not baking powder) 

 1 pinch of salt 

 3/4 cup (150g) sugar (1/2 cup if you want less sweet, 1 cup if sweeter) 

 1 large egg, beaten 

 1 teaspoon vanilla extract 

 1 1/2 cups (205 g) all-purpose flour 

 

 Method 

 1- Preheat the oven and prepare the mold: 

 Preheat  oven to 350°F (175°C) and grease an 8 x 4 inch baking tray. Mash banana and add  butter: 

 In a  bowl, mash  ripe bananas with a fork until completely smooth. Combine melted butter into  mashed banana. 

2-  Combine remaining ingredients: 

 Mix  baking soda and salt. Add sugar, beaten eggs and vanilla extract. Stir in  flour.  Bake for 55 to 65 minutes at 350°F (175°C) or until  toothpick or wooden skewer inserted in center comes out clean. A few dry crumbs are enough; wet patch no. If the outside of the loaf is golden brown but the center is still moist, cover the loaf with foil and continue baking until  fully cooked. Refrigerate and serve: 

 Remove from oven and let cool in  pan for a few minutes. Then remove the banana bread from the pan and let it cool completely before serving. Slice and serve. (The bread knife helps to create crumb-free slices.) 

 

 Properly wrapped banana bread will keep at room temperature for 4 days. For longer storage, refrigerate bread for up to 5 days or freeze.
